Ready, Spaghetti!

Cooking has never been my strong point. When I’m hungry, I’m hungry NOW, and am usually too impatient to wait around for my meal to be ready. I don’t know if it’s having my own kitchen or if I’m just growing up, but I’m starting to really enjoy putzing around the kitchen. It’s so satisfying when you have a delicious finished product in front of you, even if it’s something simple and fairly easy to make. When it’s not pizza pockets, it’s something special!

My mom made me spaghetti squash a lot growing up, and I LOVED it…maybe it’s because she doused it in butter and garlic, but nonetheless, it’s been one of my favourite foods for a long time. I had never attempted to make it myself until now, and I have to say I was surprised by how easy it is! Spaghetti squash may be super easy to make, but it’s healthy and easy to dress up as an elaborate dish. This is perfect for an easy post-work (or in my case, post-gym) dinner, since you throw it in the oven for 45 minutes and can go shower and settle in for the night. I found out how to cook spaghetti squash on Pinterest, and stole the idea for this basil-butter sauce from my friend Riley. This recipe is DELICIOUS, can be paired with so many different sides to make a fabulous meal, and makes a ton of food (perfect for leftovers). ♡

[Cut the squash in half and scrape out the seeds with a fork. Place the halves face-up in a baking pan. Brush olive oil over the surface and season with salt, pepper, and garlic. Pop it in a 350º oven for 45-50 minutes.]

 

 

[To make the sauce, simply melt butter and basil in a pan over low heat. I prefer mine to be extra buttery, but feel free to use as much or as little of butter or basil as you like. It isn’t rocket science, and measurements don’t really matter here! You could also add garlic, however I chose to sprinkle the garlic directly on the squash.]

 

  

 

[After 45 minutes, the oil should be bubbling and the edges should be browned. Take the squash out of the oven and use a fork to scrape the squash onto your serving dish (be careful, it’s HOT!!)]

[Pour the sauce over the squash. I chose to make broccoli as a side, and poured the remaining butter over the veggies. Plate and ENJOY!]
